12 Days of Celiac Christmas: #4 The Pure Pantry

Welcome to Day 4 of the 12 Days of Celiac Christmas. Today we have another day brought to us by The Pure Pantry. After burning everything yesterday, I had a much more successful day in the kitchen. I made dark chocolate chip and pecan scones from the OLD FASHIONED PANCAKE & BAKING MIX from The Pure Pantry. You can find more about this mix here.

While I wanted to make her Maple Pecan scones from the recipe on her website, I just bought amazing high-end chocolate chips from our upscale grocery store and wanted to use them in a recipe. I found a recipe online for the buckwheat scones I burned yesterday and switched it up using some chopped pecans and chocolate chips to taste (aka – a lot of chocolate). Keep in mind that I didn’t make them into scone shape, because I don’t really have time for perfection in the kitchen – I just did drop-biscuit-esque shaped scones. Guess what, they were awesome!

I brought these scones to a gluten-full party (who brings scones to a party, me!) and they were very well-received by the party. They wanted to save them and take them home to have the next morning with coffee. Were these scones a success? In my book, being favored by a gluten-full crowd means I did a great job!

Old Fashioned Baking Mix Ingredients:
Organic brown rice flour, organic white rice flour, organic potato starch flour, organic corn flour, organic tapioca flour, baking soda, aluminum free baking powder, xanthan gum, organic sea salt.

Keep in mind that this mix can do so much more – like pancakes. And who doesn’t love pancakes. Did you know that on top of being gluten-free, the mixes are also dairy-free, soy-free, egg-free, nut-free, and free of GMO’s?!?!

Although I haven’t written the review yet, they also have a chocolate chip cookie baking mix that is my favorite cookie mix on the market. Like I said before, Elizabeth from The Pure Pantry is awesome. But did you know that she also has a cookbook? There’s also a section on how to stock your gluten-free pantry – which is something we should all learn, even people that have been Celiac or gluten-sensitive for a while!     The Buckwheat Flax mix sounds wonderful! Also, I couldn’t choose between the chocolate chip cookie mix and the oatmeal mix, they both sound sumptuous too. Thank goodness for companies like Pure Pantry near the holidays (and always!), we don’t have to feel left out. Happy eating!

    Oh they all look so good! Would love to try those buckwheat/flax pancakes, but those chocolate chip cookies look amazing and would likely be a hit with the kids! So glad to now know about Pure Pantry!
