12 Days of Celiac Christmas: #3 The Pure Pantry

Welcome to DAY THREE of the 12 Days of Celiac Christmas giveaway. Today we’re highlighting the Pure Pantry Buckwheat Pancake and Baking Mix!

Buckwheat – but doesn’t that have WHEAT IN IT? HA, silly me – I asked that question for the first few years of being a celiac. I never really knew that buckwheat was a great grain for us to have. It’s a plant that has really pretty flowers – unlike it’s jerk friend, wheat.

Buckwheat has a very interesting whole-grain-like texture. It’s thicker and grainier than a traditional flour product. I really like that aspect of it, especially in pancakes. Makes me feel like I’m eating something other than something found at the Waffle House. Yes, perhaps I’m being a pancake elitist  but this mix makes great, and unique pancakes.

The Pure Pantry is certified organic as well as being gluten-free. Elizabeth, the CEO of The Pure Pantry, is also a really neat, super lady – so of course I love supporting people like that! I wrote about them before in one of my first posts a long long time ago. Their sugar cookie mix is AMAZING – and so is their chocolate chip cookie mix. In fact, those two mixes are my go-to mixes if I need to make cookies for any party. That is, if I can find them! I find mine at Whole Foods, but I’m starting to find that only some of them carry it. SO when I do find it at places like Sprouts, I stock up on the blue bag (that’s chocolate chip cookies).

    When diagnosed with celiac disease 10 yrs ago my father, god bless his soul, made bread out of buckwheat flour in an attempt to have my young daughter and myself be able to eat something! It actually wasn’t too bad!

    I’d love to use the pancake/baking mix to make scones! I haven’t had one since i went gf. They’re my favorite, or were. My mom got me gf toaster pancakes on vacation once that were buckwheat. They were good with lots of butter and peanutbutter.
