Celiac Awareness Month Day 28: Rudi’s Gluten Free Bakery

Can you believe it’s already the 28th day of Celiac Disease Awareness Month? I sure can’t, but then again doing a giveaway a day has made my head spin! Thankfully, we’ve got an old favorite for Day 28, so I don’t have to work too hard to get you onboard to enter to win some awesome goodies from this sponsor! Rudi’s Gluten Free Bakery has been around since 1976 – from an organic bakery, to branching out to a gluten-free full line that is GFCO certified.

Their new products include their CHERRY ALMOND BARS and their CIABATTA ROLLS and we had a chance to try them out!

The Cherry Almond Bars were being sampled at numerous gluten-free expos, and apparently they’re now out at Whole Foods Market, Vitamin Cottage, and Colorado Costcos! Here’s the ingredients:

Rolled oats, almond butter, honey, gluten-free flour blend (cornstarch, sorghum flour, sweet rice flour, potato starch, potato flour), almonds, canola oil, brown rice syrup, dried cranberries, dried cherries, puffed brown rice, ground flaxseed, vanilla extract, sea salt, natural almond flavor, cinnamon, ground nutmeg.

I made ciabatta rolls to make turkey sandwich appetizers. You can just stick them in the oven to toast, cut them open, put a slice of folded turkey inside and dress it! While these may not be suitable for a sandwich size – they’re great for appetizers but a few would suffice for a meal! The rosemary and olive oil were my favorite – so tasty!

Here are the ingredients of these awesome little rolls:

Water, potato extract, tapioca starch, rice flour, rice starch, evaporated cane juice (cane sugar), egg white, yeast, sea salt, xanthan gum, olive oil, rosemary, sodium bicarbonate, garlic powder, natural enzymes.

    I can’t have the bars due to an allergy to nuts but LOVE their spinach and fiesta tortillas. It’s like heaven in a wrap. I love making quesadillas. 🙂 I want to try the rolls too!

    anything on a ciabatta….I would keep one in my purse when I go out to dinner and make an avocado sandwich! I miss ciabattas

    We LOVE the Rudi’s gluten-free ciabatta rolls! They are the perfect side dish with a nice “Sunday dinner” or just an easy accompaniment to mac & cheese.

    I would love to try the Rudi’s Gluten Free Bakery Ciabatta rolls, (slice one open if not already cut open) add fresh from the garden tomato slice, fresh basil, and slices of mozzarella cheese. Top with some balsamic vinegar and minced fresh garlic. YUMMY!!
