#EatMighty with Peanut Butter & Co Mighty Nut

You might be familiar with Peanut Butter & Co’s gluten-free dairy-free line of peanut butter. However, you’re probably not familiar with their brand new line of powdered peanut butter – Mighty Nut. Might Nut is a powdered peanut butter that has less fat than peanut butter and high protein. This makes it great for things like protein shakes or oatmeal – but we’ll get to that later.

Peanut Butter & Co Mighty Nut

These powdered peanut butters are available in four flavors – original, chocolate, flax & chia, and vanilla. Each one is in a plastic resealable tub.

Each batch of Mighty Nut is created from quality USA-grown peanuts. The peanuts are roasted, then pressed, to remove most of the fat. What remains is protein, fiber and delicious peanut buttery taste. They are gluten-free and dairy-free, as well as certified vegan.

If you’ve never used a powdered peanut butter before, it might seem a little strange. But, it’s just peanut butter – but powdered! Here’s how to use something like this:

  1. Use As-Is! Sprinkle it into protein smoothies and shakes. Top oatmeal or morning smoothie bowls.
  2. Rehydrate It! Add water or non-dairy milk to make it a consistently you’re familiar with when it comes to peanut butter. Once it’s in its original form, you can use it as a spread – just without the fat.

Here’s my favorite use of powdered peanut butter – like Mighty Nut! It’s super simple and quick for rushed mornings.

Make gluten-free rolled oats or gluten-free quick oats as per the directions. I prefer adding in a non-dairy milk instead of water to make the oats to make them creamier. Once the oats are fully cooked, spoon in one (or more to taste) tablespoons of Mighty Nut into the oatmeal. If you prefer a more creamy oatmeal, you may have to add a tablespoon or so of heated non-dairy milk to rehydrate the peanut butter. Stir, and enjoy! The vanilla is sweet enough to add to oatmeal without any additional sweetener. If you use the original, you can add a tablespoon of honey on top. If you want to make PB&J oatmeal, follow as above and top with 1 tablespoon of jam/jelly and gently stir in to the oatmeal!

    I’d like to try the flax & chia version. I’ve been tracking my food closely since I started training for my half marathon and it’s really made me aware of some ways my diet is lacking: fiber being one of them! I already like normal powdered PB so why not make it do double duty? 🙂
