Welcome to another installment of Enjoy Life Foods‘ Fridays! This Friday we’re talking about PIZZA, because the start of the weekend is always better with pizza. But today we’re making a special pizza with some pretty awesome ingredients.

But first, the crust. The Enjoy Life Foods’ pizza crust mix is pretty new, but hopefully you’ve had a chance to try it! It’s one of my favorites out of the new baking mixes. These baking mixes are all higher-protein mixes made from ancient grains like teff and millet. This pizza crust mix, on top of its unique ingredients, is also incredibly easy to make – just oil and water! But what to put on top?

I was given several bags of amazing figs from Orchard Choice Figs from Valley Fig Growers. They were a sponsor at Eat Write Retreat a few weeks ago. Since then, I couldn’t wait to see what I could make with them. I finally figured out that I wanted to recreate a delicious pizza that I used to make when I first went gluten free. The pizza had fig jam, goat cheese, proscuitto and arugula. It honestly tasted more like a salad than a pizza, and that was exactly what I was craving. But because I have been dairy free for so long, I just grabbed a bag of Daiya and headed to the world wide web for some recipe help. I used the quick fig jam recipe found on The Kitchn blog, using dried figs.It was super easy with just needing water, sugar, lemon, and a touch of vanilla – in addition to about half a bag of figs.

And what’s even better? I didn’t even screw it up. I know, you’re shocked. Just look! I made this! Apparently it stays good for about a week in the fridge, but I know it won’t last that long. Hello, leftovers for breakfast.

I spread the fig jam on the pizza crust, after it had about 12 minutes in the oven to firm up (per the instructions on the box). After a layer of jam, I added Daiya cheese and prosciutto. I prefer my raw ham a little crispy, but some make this pizza with the prosciutto added after the pizza comes out of the oven.

After the pizza was pulled out from the oven, the arugula was chopped and placed on the pizza. Then it was time to chow down! Look at how impressive this looks for being homemade – from me!

    I’ve recently found out that I’m pretty sensitive to tomatoes, so this is an awesome option in place of pizza sauce! Usually, I put sliced figs from our tree on top of my pizza, but I love to idea of using figs in the sauce!

    My favorite pizza combination starts with a thin layer of olive oil. chopped garlic, spinach, sun dried tomatoes, feta cheese, pine nuts, mozzarella and fresh basil.

    I can no longer have tomatoes – this sounds like a good recipe to try. Or I would do olive oil, spices, Romano cheese, Sweet Italian Sausage, choppped white onions and more provolone cheese.

    I love home-made tomato sauce, fresh bell peppers, fresh mushrooms, caramelized onions, and Daiya cheese. After it has been baked in the oven, I love to top it with arugula, drizzled with extra virgin olive oil. Yum…Yum!
