I love nachos, like any red-blooded American who loves eating terrible food. But since going gluten-free and dairy-free, most of my nachos are homemade. It’s not necessarily a bad thing, because the nachos that I make are of much higher-quality than that mystery cheese most nachos are made with! I add Daiya cheese or Follow Your Heart cheese shreds to my Beanfields chips. I melt it in the oven or in a countertop convection oven or pizza maker. I then add beans – either plain beans or refried beans. After the nachos are out of the oven, I’ll add guacamole or a sliced avocado along with pico de gallo.
