REVIEW: XO Baking Co. Gluten Free Banana Bread

XO Baking Co. is a great company out of SoCal that makes their products with coconut flour. I recently really got into coconut flour and oil and milk – so I’m pretty excited about using my first mixes with the flour. XO Baking Co. is the first GF baking company to use organic coconut flour, according to the website. You can find their products on their website here and interact with them on their Facebook here.

Their products are gluten-free, dairy-free, peanut-free, and kosher. They’re made in a dedicated gluten-free facility. Although they contain no milk or egg product, they are not certified vegan. Several of their products, including the banana bread mixes are soy-free too! Lindsey gave me a few mixes to try out – and one of them was the banana bread that you’ll see below. Thanks!

Their all-purpose flour can be used cup-for-cup for regular flour – another great alternative for making your own GF flour!

Their products are available in many stores, including Whole Foods – using their store finder.

On top of XO Baking Co. having great ingredients in their mixes, I’d like to tell you about Lindsey from XO Baking Co. – she’s awesome! She’s also a certified health and nutrition coach, as seen in the “about” section.  I think she’s been at every expo I’ve been at recently, and she is a hard worker. As a self-starter myself, I like to support people like her and her company!

Here’s some pictures that show my time making their banana bread mix. I LOVE banana bread – even though I’m now “sensitive” to bananas – boo! It was great! I made it extra coconut-y by making it with coconut milk and coconut oil!

The result? YUM! I dig it! As soon as I’m cleared for bananas again, I plan on making this ASAP. It’s a great mix and I love making things with coconut flour!

    I LOVE banana bread and since I’m kind of new to GF, I thought it would be one of those things I would have to sacrifice. Its cool to see that this brand has even made a special banana bread mix!

    I love Coconut water and coconut but have never tried coconut flour- these products sound amazing and I am sure do not suffer from the dryness of other gluten free baked products.Thanks for the opportunity
