My friend Jules Shepard (HUMBLE BRAG MUCH, CATB?) reached out to me and wanted to know if i’d help spread the good word about her awesome mixes (made by actually her and not some company that still has her name unfortunately). Because she’s only like an epic superhero in the gluten-free community (we owe her – and others – for the 20ppm FDA labeling fight), I just had to say yes!

I requested the gingerbread/graham cracker cookie mix and the cookie mix. Due to my epic crap-fest of a move, I haven’t made my Enjoy Life Foods chocolate chip cookies with her mix yet. BUT – these gingerbread cookies blew my mind. If you know me well, you know that I kind of fake my way through recipes. For example, I decided to make these cookies the night before we moved out of our house. At least I remembered to take out all the ingredients listed on the box before I started. What I didn’t have – was anything to mix the ingredients with, anything to roll out the dough, any cookie cutter, or anything to get the cookies off of the baking sheet when they were done.

Yep, sounds like me – right?

I faked it by mixing the batter with a spatula, rolling out the dough with a water bottle, and digging through all of my packed kitchen to find the one cookie cutter I own (because you can’t fake a cookie cutter). And you know what? They turned out perfect! We even had fun and made fun shape cut-outs on the snowmen like buttons and initials. This dough was fantastic, and it seemed to have a high yield of cookies. In fact, I made enough cookies for the family and still have half the dough in my freezer! There’s no way I’m ever making my own gingerbread cookies from scratch again. If anything, I would add a teaspoon more pumpkin spice flavoring than is called for, as I really love those spices and would love to taste more of them in the dough.

P.S. There’s not a rule about only making gingerbread during the holiday season, right? RIGHT?

    Graham Cracker. GRAHAM CRACKUH. I’ve only had a sample of Schar’s graham crackers, and while they were almost Nabisco-comparable, I can;t find them ANYWHERE. Bring on the mix!

    And I’m lovin’ that picture of you. If I’m not mistaken, that’s exactly how I looked when I tried Schar’s graham crackers.

    I love the pizza mix! But I haven’t gotten the chance to try the waffle/pancake mix! I’ve made my own with Jules flour but the simplicity of a mix is enticing!
